I'm just wondering if I had to view my own Pinterest ad if that would mess with the analytics?

Yes. Pinterest has to track any and all results relating to any campaign its running, and tracks every click, every view and every pin, including yours. It wont mess with the analytics, Pinterest analytics are counted when your ad shows up in search results or when it is clicked on.
